Ingredients

Scale
  • 1 medium head cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour (90 g)
  • 1/2 cup cornmeal (60 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup water (180 ml)
  • 1/2 cup buffalo sauce (120 ml)
  • 1 tablespoon olive oil or melted butter
  • For the Blue Cheese Dip:
  • 1/2 cup blue cheese crumbles (75 g)
  • 1/2 cup sour cream (120 g)
  • 1/4 cup mayonnaise (60 g)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Chopped fresh chives or parsley (optional, for garnish)

Instructions

  1. Preheat oven to 450°F (230°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together flour, cornmeal, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Gradually add water to the dry ingredients, whisking until smooth and batter is thick but pourable.
  4. Add cauliflower florets to the batter and toss gently to coat evenly. Use a slotted spoon or tongs to lift florets, letting excess batter drip off.
  5. Arrange coated florets in a single layer on the prepared baking sheet, ensuring they do not touch.
  6. Bake for 20 minutes, flipping each piece halfway through (around 10 minutes) for even crispiness.
  7. While baking, mix buffalo sauce with olive oil or melted butter in a small bowl.
  8. Remove florets from oven and toss gently in the buffalo sauce mixture until well coated.
  9. Return sauced florets to the baking sheet and bake for an additional 10 minutes to caramelize the sauce.
  10. Prepare the blue cheese dip by mixing blue cheese crumbles, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper in a small bowl. Garnish with chopped chives or parsley if desired.
  11. Serve the crispy buffalo cauliflower bites warm alongside the blue cheese dip.

Notes

Use cornmeal for extra crunch and avoid overcrowding the baking sheet to ensure crispiness. Flip florets halfway through baking. Toss cauliflower in buffalo sauce after the first bake to prevent sogginess. For gluten-free, substitute all-purpose flour with almond or chickpea flour. Blue cheese dip can be adjusted for milder flavor by adding more mayonnaise or sour cream.
