Ingredients

Scale
  • 4 medium green tomatoes (about 1.5 lbs / 680g), firm and unripe
  • 1 cup (120g) all-purpose flour
  • 1 cup (150g) yellow cornmeal, medium-grind
  • 1/2 cup (30g) panko breadcrumbs
  • 2 large eggs, beaten
  • 1/4 cup (60ml) buttermilk
  • 1 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • Neutral oil for frying (about 2 cups / 480ml; vegetable, canola, or peanut oil)
  • 1/2 cup (120g) sour cream (full-fat recommended)
  • 1/4 cup (60ml) buttermilk (for the dip)
  • 1/4 cup (60g) mayonnaise
  • 2 tablespoons fresh dill, chopped (or 2 teaspoons dried)
  • 2 tablespoons fresh parsley, chopped (or 2 teaspoons dried)
  • 1/2 teaspoon garlic powder (for the dip)
  • 1/2 teaspoon onion powder (for the dip)
  • 1/4 teaspoon salt (for the dip)
  • 1/4 teaspoon black pepper (for the dip)

Instructions

  1. Make the ranch dip: In a small bowl, whisk together sour cream, buttermilk, mayonnaise, fresh dill, fresh parsley, garlic powder, onion powder, salt, and pepper. Taste and adjust salt if needed. Cover and refrigerate for at least 10 minutes (up to 30 minutes for best flavor).
  2. Slice the tomatoes: Wash and pat dry green tomatoes. Slice off stem end and a thin slice from the bottom. Cut into 1/4-inch (6mm) thick rounds. Lay on a paper towel-lined plate, sprinkle lightly with salt, and let sit for 5 minutes. Pat dry again before breading.
  3. Set up breading station: In first shallow bowl, combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. In second bowl, whisk together eggs and buttermilk until smooth. In third bowl, mix cornmeal, panko, paprika, garlic powder, onion powder, cayenne (if using), remaining 1/2 teaspoon salt, and remaining 1/4 teaspoon pepper. Line up bowls in order: flour, egg wash, cornmeal mixture. Place a wire rack nearby.
  4. Bread the tomatoes: Dredge each tomato slice in flour mixture, shaking off excess. Dip into egg wash, letting excess drip off. Press into cornmeal mixture, coating both sides thoroughly. Place on wire rack. Repeat with all slices. Let rest on rack for 5 minutes to set coating.
  5. Heat the oil: Pour about 1 inch (2.5cm) of oil into a large cast-iron skillet or heavy-bottomed pot. Heat over medium-high heat to 350°F (175°C). Use a deep-fry thermometer for accuracy.
  6. Fry the tomatoes: Carefully place 3-4 breaded slices into hot oil using tongs. Do not overcrowd. Fry for 2-3 minutes per side until golden brown and crispy. Flip once. Transfer to wire rack and sprinkle with a tiny pinch of salt while hot. Repeat with remaining slices, letting oil return to 350°F (175°C) between batches.
  7. Serve immediately: Arrange fried tomatoes on a platter with buttermilk ranch dip in the center. Garnish with extra fresh dill or parsley if desired. Best eaten within 5 minutes of frying.

Notes

Oil temperature is critical: keep between 325°F-375°F (160°C-190°C). Let breaded tomatoes rest for 5 minutes before frying to prevent coating from sliding off. Use completely green, rock-hard tomatoes for best texture. For extra crunch, double-dredge by repeating egg wash and cornmeal steps. To keep fried tomatoes warm while cooking batches, place on wire rack in a 200°F (90°C) oven. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat on a wire rack in a 375°F (190°C) oven for 5-7 minutes. Do not microwave.
