  • 3 tablespoons unsalted butter
  • 4 cloves garlic, thinly sliced
  • 1/3 cup sliced almonds
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Prep the green beans: Wash them thoroughly and pat them completely dry with paper towels. Trim the stem ends off each bean.
  2. Toast the almonds: Heat a small dry skillet over medium heat. Add the sliced almonds and cook, shaking the pan frequently, until golden and fragrant, about 2-3 minutes. Pour into a small bowl and set aside.
  3. Blanch the green beans (optional but recommended): Bring a large pot of salted water to a boil. Add the green beans and cook for exactly 2 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking.
  4. Start the brown butter: In a large skillet, melt the butter over medium heat. Let it cook, swirling occasionally, until it turns a golden brown color and smells nutty, about 3-4 minutes.
  5. Add the garlic: Once the butter is browned, add the sliced garlic and cook for about 30 seconds, stirring constantly, until fragrant and just starting to turn golden.
  6. Cook the green beans: Add the blanched (or raw) green beans to the skillet. Increase the heat to medium-high and cook, stirring occasionally, for 3-4 minutes (5-6 minutes if using raw beans) until tender-crisp and slightly colored.
  7. Add the herbs and seasoning: Sprinkle in the fresh thyme leaves, salt, and pepper. Toss everything together and cook for another minute.
  8. Finish with lemon and almonds: Remove the skillet from the heat. Squeeze the fresh lemon juice over the top, add the toasted almonds and fresh parsley, and toss everything together. Add red pepper flakes if using. Taste and adjust seasoning.
  9. Serve immediately: Transfer to a serving platter and enjoy while hot.

Notes

Don’t burn the garlic—add it for only 30 seconds before adding the beans. Toast almonds separately to keep them crispy. Use a 12-inch skillet to avoid overcrowding. Brown butter adds depth of flavor. Season in layers for best results.
