A quick and easy snack featuring mini bagels toasted to crispy perfection, topped with tomato sauce, melted mozzarella, and herbs for a savory bite.

Ingredients

  • Mini bagels (plain or everything, slightly day-old preferred)
  • Tomato sauce (about 1 tablespoon per bagel half)
  • Shredded mozzarella cheese (generous handful per pizza)
  • Freshly grated Parmesan cheese (about 1 teaspoon per pizza)
  • Olive oil (for brushing bagels)
  • Dried oregano (to taste)
  • Crushed red pepper flakes (optional, to taste)
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cut mini bagels in half horizontally. Trim bottom halves if very thick for even toasting.
  3. Brush the cut sides lightly with olive oil.
  4. Place bagel halves cut-side up on the baking sheet and toast in the oven for 5-7 minutes until golden and firm.
  5. Remove bagels from oven and spread about 1 tablespoon of tomato sauce evenly on each half.
  6. Sprinkle a generous handful of shredded mozzarella on top, then dust with about 1 teaspoon of grated Parmesan.
  7. Sprinkle dried oregano and crushed red pepper flakes if using.
  8. Return the baking sheet to the oven and bake for 8-10 minutes until cheese is melted, bubbly, and starting to brown.
  9. Optional: Remove from oven and add fresh basil or parsley for freshness.
  10. Let the mini pizzas cool for a couple of minutes before serving.

Notes

Toast bagels first to avoid soggy bottoms. Use just enough sauce to keep the base crispy. Watch the oven closely near the end to prevent burning the cheese. Fresh toppings like tomatoes should be added after baking to avoid sogginess. Leftovers can be reheated in a toaster oven for best crispness.
