A quick and easy weeknight dinner featuring bone-in chicken thighs and Yukon Gold potatoes roasted together in one pan with lemon, garlic, and herbs. The chicken skin gets shatteringly crisp while the potatoes soak up the lemony juices.

  • 46 bone-in, skin-on chicken thighs (about 2 lbs / 900g)
  • 1.5 lbs (680g) Yukon Gold potatoes, sliced into ¼-inch rounds
  • 2 fresh lemons (1 juiced, 1 sliced)
  • 6 cloves garlic, smashed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 3 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Position rack in the middle.
  2. Scrub potatoes (leave skin on) and slice into ¼-inch rounds. Place in a large bowl.
  3. Drizzle potatoes with 1 tablespoon olive oil, season with salt and pepper, and toss to coat. Spread in an even layer in a cold 12-inch oven-safe skillet.
  4. Pat chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  5. In a small bowl, combine remaining 2 tablespoons olive oil, dried oregano, dried thyme, paprika, and juice of 1 lemon. Stir to combine.
  6. Nestle chicken thighs skin-side up into the potatoes. Pour herb oil over chicken, using hands or a brush to coat skin evenly. Tuck smashed garlic cloves and lemon slices from the second lemon around the chicken.
  7. Roast for 35-40 minutes. Do not open the oven for the first 25 minutes. Check potatoes for tenderness and chicken skin for deep golden crispness. If needed, broil for 2-3 minutes at the end, watching closely.
  8. Let skillet rest for 5 minutes before serving. Sprinkle with fresh parsley if using.

Notes

Start with a cold pan for the potatoes to prevent burning. Dry chicken skin thoroughly for maximum crispiness. Use a meat thermometer; cook chicken thighs to 175-185°F (80-85°C) for juiciest results. Let the dish rest 5 minutes before serving. For extra crispiness, broil for 2-3 minutes at the end, watching closely.
