This easy one-pan recipe features crispy bone-in, skin-on chicken thighs glazed with a sweet and tangy maple Dijon sauce, roasted alongside tender, caramelized sweet potatoes. Perfect for cozy dinners with minimal cleanup.

  • 46 bone-in, skin-on chicken thighs (about 1.5 to 2 pounds / 700900 grams)
  • 2 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons pure maple syrup (Grade A amber recommended)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, thyme, salt, and pepper until smooth and slightly thick.
  3. Pat chicken thighs dry with paper towels. Toss sweet potato cubes with a bit of olive oil, salt, and pepper.
  4. Arrange chicken thighs skin-side down in a large oven-safe skillet, spacing them apart. Nestle sweet potatoes around the chicken.
  5. Pour the maple Dijon glaze over the chicken and potatoes, coating the chicken lightly to keep skin crisp.
  6. Place skillet over medium-high heat and sear chicken for 3-4 minutes, pressing lightly to ensure contact with the pan.
  7. Flip chicken thighs skin-side up and sear for 1 minute if needed to finish browning the skin.
  8. Transfer skillet to the preheated oven and roast for 20-25 minutes until chicken reaches 165°F (74°C) internal temperature and sweet potatoes are tender and caramelized.
  9. Check doneness with a meat thermometer. If skin isn’t crispy enough, broil for 1-2 minutes carefully to avoid burning.
  10. Remove from oven and let chicken rest for 5 minutes before serving.

Pat chicken skin dry before seasoning to ensure crispiness. Apply glaze lightly on chicken skin before searing and pour extra glaze around the pan to avoid soggy skin. Use a meat thermometer to check for doneness. Rest chicken 5 minutes before serving. If skin isn’t crispy enough, broil briefly but watch carefully to prevent burning. For faster cooking, parboil sweet potatoes before roasting. Can add smoked paprika or cayenne for a spicy twist. Use fresh herbs like rosemary or sage as alternatives to thyme.
