A delightful brunch recipe featuring thick-cut brioche or challah bread stuffed with a creamy peach and cream cheese filling, pan-fried to a crispy golden crust. Perfect for busy mornings or relaxed weekends.

Ingredients

Scale
  • 2 medium fresh peaches, peeled and thinly sliced
  • 4 oz (113 g) cream cheese, softened (full-fat recommended)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon (for filling)
  • 3 large eggs, room temperature
  • 3/4 cup (180 ml) whole milk (can substitute almond or oat milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon (for batter)
  • Pinch of salt
  • 8 slices thick-cut brioche or challah bread
  • 2 tablespoons unsalted butter (can substitute coconut oil for dairy-free)
  • Maple syrup or honey (for serving, optional)

Instructions

  1. Prepare the peach cream cheese filling: In a bowl, combine softened cream cheese, brown sugar, and 1/2 teaspoon ground cinnamon. Stir until smooth and creamy. Gently fold in the sliced peaches without mashing. Set aside.
  2. Make the French toast batter: In a large shallow bowl, whisk together eggs, milk, vanilla extract, 1 teaspoon ground cinnamon, and a pinch of salt until well combined and slightly frothy.
  3. Stuff the bread slices: Using a serrated knife, slice each bread piece horizontally to create a pocket without cutting all the way through. Spread about 2 tablespoons of the peach cream cheese mixture inside each slice, being careful not to overstuff.
  4. Heat the pan: Place a non-stick skillet or cast-iron pan over medium heat and add 1 tablespoon of butter. Let it melt and foam but not brown.
  5. Dip and cook the French toast: Quickly dip each stuffed slice into the batter, coating both sides evenly. Let excess drip off. Place carefully in the hot skillet. Cook for about 3-4 minutes per side until deep golden brown and crispy. Adjust heat as needed to prevent burning.
  6. Repeat with remaining slices, adding more butter if needed. Serve warm, drizzled with maple syrup or honey, and optionally dusted with powdered sugar.

Notes

Use thick-cut brioche or challah bread for best results. Avoid over-soaking bread in batter to prevent sogginess. Medium heat is ideal to achieve a crispy crust without burning. Let stuffed bread rest a minute before dipping to reduce leaks. For dairy-free, substitute cream cheese and milk with plant-based alternatives and use coconut oil for frying. Leftovers keep well refrigerated for up to 2 days; reheat gently in skillet or toaster oven to maintain crispiness.
