These crispy smash burger sliders feature thin, caramelized patties with melted American cheese and tangy pickled onions, perfect for quick, satisfying meals or casual gatherings.

  • 1 pound ground beef (80/20 blend recommended)
  • 6 slices American cheese
  • 6 small slider buns, lightly toasted
  • 1 medium yellow onion, thinly sliced
  • ½ cup white vinegar (120 ml)
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt (plus more for seasoning beef)
  • Freshly ground black pepper, to taste
  • 2 tablespoons vegetable or canola oil
  • 2 tablespoons softened butter (optional, for toasting buns)

Instructions

  1. Thinly slice the yellow onion and place in a small bowl.
  2. In a separate bowl, whisk together ½ cup white vinegar, 1 tablespoon sugar, and 1 teaspoon salt until dissolved.
  3. Pour the pickling liquid over the onions, stir, and let sit at room temperature for at least 15 minutes. Refrigerate up to 2 days if desired.
  4. Divide the ground beef into 6 equal portions (about 2.6 oz each). Roll each loosely into a ball without packing tightly.
  5. Heat a cast iron skillet over medium-high heat until very hot.
  6. Optional: Spread softened butter on the cut side of slider buns and toast butter-side down in skillet until golden and crisp. Remove and set aside.
  7. Add 1 tablespoon oil to the hot skillet. Place 3 beef balls in the pan, spacing apart.
  8. Use a sturdy metal spatula to smash each ball firmly into a thin patty about ¼ inch thick. Do not move for about 2 minutes to form crust.
  9. Flip patties once edges are crisp and browned. Immediately place a slice of American cheese on each patty.
  10. Cook for another 1-2 minutes until cheese melts and patties are cooked through.
  11. Place each patty on a toasted bun bottom, top with a generous spoonful of pickled onions, then cover with bun top.
  12. Serve immediately while cheese is gooey and patties are crispy.

Notes

Use 80/20 ground beef for best crust and juiciness. Keep skillet very hot before cooking. Smash patties firmly and quickly, hold smash for about 10 seconds. Salt patties just before smashing. Cover pan with lid to melt cheese perfectly. Pickled onions add brightness and balance richness. To keep patties warm, tent with foil. Do not crowd pan to maintain heat.
