Ingredients

  • Fresh pumpkin seeds (from 1 medium pumpkin, about 1½ cups)
  • Water (4 cups, for boiling)
  • Salt (1 tablespoon, plus more for boiling)
  • Olive oil (2 tablespoons)
  • Smoked paprika (1½ teaspoons)
  • Garlic powder (1 teaspoon)
  • Onion powder (½ teaspoon)
  • Black pepper (¼ teaspoon, freshly ground)
  • Cayenne pepper (⅛ teaspoon, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Give it a full 15 minutes to come to temperature.
  2. Clean the pumpkin seeds. Separate the seeds from the stringy pumpkin pulp. Place them in a colander and rinse under cold running water, rubbing gently with your fingers to remove any remaining bits.
  3. Boil the seeds. Fill a medium saucepan with 4 cups of water and add 1 tablespoon of salt. Bring to a rolling boil over high heat. Add the cleaned seeds and boil for exactly 10 minutes.
  4. Drain and dry thoroughly. Pour the boiled seeds into the colander and let them cool for a minute. Then spread them out on a clean kitchen towel and pat them completely dry.
  5. Season the seeds. Transfer the dried seeds to a medium mixing bowl. Drizzle with olive oil and toss to coat evenly. In a small bowl, combine the smoked paprika, garlic powder, onion powder, black pepper, and cayenne if using. Sprinkle the spice mixture over the seeds and toss again until every seed is well coated.
  6. Spread on baking sheet. Line a rimmed baking sheet with parchment paper. Spread the seasoned seeds in a single, even layer.
  7. Roast for 20-25 minutes. Place the baking sheet on the middle rack of your preheated oven. Roast for 10 minutes, then remove the sheet and stir the seeds with a spatula. Spread them back into an even layer and return to the oven. Roast for another 10-15 minutes, checking at the 20-minute mark. The seeds are done when they’re golden brown and smell nutty and toasty.
  8. Cool completely. Remove the baking sheet from the oven and let the seeds cool right on the pan for at least 15 minutes.
  9. Taste and adjust. Once cooled, give them a taste. Need more salt? Sprinkle a little more while they’re still slightly warm so it sticks. Let them cool completely before storing.
