Instructions

  1. Lay one tortilla flat on a clean cutting board. Ensure cream cheese is softened (about 10 minutes at room temperature).
  2. Spread about 2 tablespoons (30 g) cream cheese evenly over the tortilla, leaving a ½ inch (1 cm) border at the edges.
  3. Layer 3-4 slices of turkey evenly over the cream cheese, slightly overlapping.
  4. Sprinkle a small handful (10-15 grams) of baby spinach or mixed greens evenly over the turkey.
  5. Add about 1 tablespoon (10 g) shredded cheddar cheese evenly on top.
  6. Starting from one edge, roll the tortilla tightly but gently into a log.
  7. Optionally, wrap the rolled log tightly in plastic wrap and refrigerate for 15-30 minutes to firm up.
  8. Using a sharp knife, cut the roll into 1-inch (2.5 cm) thick pinwheels, yielding about 6-8 pieces per tortilla.
  9. Pack the pinwheels in lunchboxes or containers and serve chilled or at room temperature.
