  • 1 tablespoon brown sugar (optional, for sweet version)

Instructions

  1. Clean the seeds: Separate pumpkin seeds from stringy pulp. Rinse in a colander under cold water, removing any remaining pumpkin flesh.
  2. Dry the seeds thoroughly: Spread rinsed seeds on a clean kitchen towel and pat very dry. Let air-dry for 10 minutes if possible.
  3. Preheat the air fryer to 350°F (175°C) for 3 minutes.
  4. Season the seeds: In a medium bowl, combine dried seeds, olive oil, salt, garlic powder, and smoked paprika. Toss until every seed is coated. For sweet version, add brown sugar now.
  5. Arrange seeds in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
  6. Air fry at 350°F for 5 minutes. You’ll hear sizzling and popping as moisture evaporates.
  7. Shake the basket gently to redistribute seeds. They should be starting to turn golden.
  8. Continue air frying for 3-5 more minutes, checking at the 3-minute mark. Seeds are done when golden brown and rattling in the basket.
  9. Transfer hot seeds to a plate or baking sheet in a single layer. Cool completely for at least 10 minutes (they get crunchier as they cool).
  10. Taste a cooled seed and add a pinch more salt if desired.
