A simple yet elegant fall cocktail made with chilled apple cider, prosecco, and a cinnamon sugar rim. Ready in under 5 minutes, this 3-ingredient drink is perfect for Thanksgiving brunch, Halloween parties, or cozy fall gatherings.

Ingredients

Scale
  • 1 cup apple cider, chilled
  • 1 cup prosecco or champagne, chilled
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Apple slice or cinnamon stick for garnish (optional)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon. Whisk with a fork until evenly combined.
  2. Pour a thin layer of water or apple cider into another small dish. Dip the rim of a champagne flute or wine glass into the liquid, rotating gently to coat. Let excess drip off.
  3. Dip the wet rim into the cinnamon sugar mixture, rotating to coat evenly. Lift straight up and tap gently to remove excess. Let dry for about 30 seconds.
  4. Pour ½ cup chilled apple cider into the prepared glass, pouring slowly down the side to avoid disturbing the rim.
  5. Slowly pour ½ cup chilled prosecco or champagne into the glass, pouring against the side to maintain carbonation.
  6. Garnish with a thin apple slice or cinnamon stick if desired. Serve immediately.

Notes

For best results, chill all ingredients and glasses before serving. Do not stir the mimosa; the bubbles will mix the ingredients naturally. This drink is best made fresh and cannot be stored. For a non-alcoholic version, replace prosecco with sparkling apple cider or ginger ale. The 1:1 ratio of cider to prosecco is key for balanced flavor.
