These Easy Apple Cinnamon Baked Oatmeal Cups are a make-ahead breakfast that’s portable, mess-free, and naturally sweetened with apples and maple syrup. They’re perfect for busy mornings and taste just as good cold as they do warm.

  • 2 cups rolled oats (old-fashioned)
  • 2 medium apples (Honeycrisp or Fuji), peeled and diced small
  • 1/3 cup pure maple syrup
  • 2 large eggs, room temperature
  • 1 cup milk (any kind)
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil or unsalted butter, melted
  • Optional: chopped walnuts, pecans, raisins, or chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease generously.
  2. Place 1 cup rolled oats in a blender or food processor. Pulse 15-20 seconds until coarse flour forms. Pour into a large mixing bowl.
  3. Add remaining 1 cup whole rolled oats, cinnamon, baking powder, and salt to the bowl. Whisk to combine.
  4. In a separate medium bowl, whisk together eggs, maple syrup, milk, vanilla extract, and melted coconut oil or butter until smooth and slightly frothy.
  5. Fold diced apples into the wet ingredients until evenly coated.
  6. Pour wet mixture into dry ingredients. Fold with a spatula until just combined (a few streaks of flour are okay). Batter will be wet and loose.
  7. Divide batter evenly among 12 muffin cups, filling almost to the top. Sprinkle optional mix-ins on top.
  8. Bake for 18-22 minutes until tops are golden brown and a toothpick inserted in center comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve warm, at room temperature, or cold. Store in an airtight container in the refrigerator for up to 5 days.

Notes

For extra crispy tops, broil for 1-2 minutes after baking. Let batter rest 5 minutes before filling cups for a more tender texture. Dice apples small (about 1/4 inch) to avoid sogginess. Use room temperature ingredients for best results. Overbaking dries out the cups; remove when just barely done.
