Easy Candy Corn White Chocolate Popcorn Bars

These no-bake popcorn bars combine salty popcorn, sweet white chocolate, and chewy candy corn for a quick and festive fall treat that disappears in minutes.

  • 8 cups plain popped popcorn (about 1/2 cup unpopped kernels, or one standard bag of microwave popcorn, popped and lightly salted)
  • 1 ½ cups candy corn
  • 2 cups white chocolate chips
  • 1 tablespoon coconut oil (or vegetable shortening)
  • Optional: ¼ cup festive sprinkles
  • Optional: ¼ cup chopped pecans or peanuts

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Set aside.
  2. Pop your popcorn according to package directions to get 8 cups. Spread it out on a large baking sheet and pick out any unpopped kernels. Let it cool completely.
  3. Place the cooled popcorn and 1 cup of the candy corn in a large mixing bowl. Toss together gently. Reserve the remaining ½ cup of candy corn for the top.
  4. Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely smooth and glossy (about 1 ½ to 2 minutes total).
  5. Pour the melted white chocolate over the popcorn and candy corn mixture. Fold together gently but thoroughly until every piece of popcorn is coated.
  6. Transfer the mixture to the prepared pan. Spread it out evenly, then press down firmly with a spatula or the back of a measuring cup to compact it.
  7. While the chocolate is still wet, sprinkle the reserved ½ cup of candy corn over the top. Press them in gently. Add sprinkles or nuts if using.
  8. Let the bars set at room temperature for about 1 hour, or refrigerate for 20-30 minutes until firm. Lift the block out using the parchment paper, place on a cutting board, and cut into 9 or 16 squares with a sharp knife.

Notes

Work quickly once the chocolate is added to prevent it from setting before everything is coated. Let popcorn cool completely to avoid soggy bars. For clean cuts, wipe the knife between slices.
