Easy Cheesy One-Skillet Ground Beef and Rice Dinner

A quick and comforting one-skillet dinner featuring browned ground beef, tender rice cooked in beef broth, and melted sharp cheddar cheese. Perfect for busy weeknights and family meals.

  • 1 pound ground beef (80/20)
  • 1 cup white long-grain rice, rinsed
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 1/2 cups beef broth
  • 1 1/2 cups shredded sharp cheddar cheese
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it up, until browned and crispy on edges. Drain excess fat if needed.
  2. Add diced onion to the skillet and cook for 3-4 minutes until softened and translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Stir in tomato paste, smoked paprika, dried oregano, salt, and black pepper. Cook for 1 minute to caramelize the tomato paste.
  4. Add rinsed rice and stir to coat with the beef and tomato mixture. Pour in beef broth, scraping browned bits from the pan. Bring to a gentle boil.
  5. Reduce heat to low, cover skillet, and simmer for 18-20 minutes without lifting the lid.
  6. Remove lid, sprinkle shredded cheddar cheese evenly over the top. Cover again and let sit off heat for 5 minutes to melt cheese. Optionally, broil for 2 minutes for bubbly cheese.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

Do not rush browning the beef to develop flavor. Rinse rice to prevent clumping. Use broth instead of water for richer flavor. Keep lid on during simmering to trap steam. Cheese can be swapped with mozzarella or pepper jack for different textures and flavors. Add frozen peas or corn at simmer step for extra color and sweetness. Brown rice can be used but requires longer cooking time and more broth.
