Easy Cinnamon Apple Cider Mimosa with Sparkling Cinnamon Rim

A quick and easy fall cocktail featuring apple cider and dry Prosecco, with a crunchy cinnamon-sugar rim that makes every sip a moment. Perfect for holiday brunches, Friendsgiving, or cozy Sunday mornings.

  • 4 oz apple cider (unfiltered, fresh-pressed preferred)
  • 4 oz Prosecco or dry sparkling wine (not sweet like Moscato)
  • 1 tablespoon ground cinnamon (for rim)
  • 2 tablespoons granulated sugar (for rim)
  • 1 teaspoon honey or maple syrup (per glass, for rim adhesion)
  • Apple slices or cinnamon sticks (for garnish, optional)

Instructions

  1. In a shallow dish, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Stir until evenly mixed.
  2. Drizzle a tiny amount of honey or maple syrup onto a small plate. Dip the rim of a champagne flute or wine glass into the honey, rotating gently to coat evenly.
  3. Immediately dip the honey-coated rim into the cinnamon sugar mixture, pressing gently and rotating to coat. Tap off any loose sugar. Let sit for 30 seconds to set.
  4. Pour 4 oz cold apple cider into the prepared glass, pouring slowly to avoid disturbing the rim.
  5. Slowly pour 4 oz chilled Prosecco or dry sparkling wine down the side of the glass to preserve bubbles and avoid washing away the rim.
  6. Garnish with a thin apple slice on the rim or a cinnamon stick in the glass. Serve immediately.
  7. For a batch: Combine 2 cups apple cider and 2 cups Prosecco in a pitcher. Stir gently. Rim each glass individually right before pouring, then fill with the mixture.

Notes

Chill everything—cider, wine, and glasses—for best results. Rim glasses right before serving to prevent the sugar from melting. For a non-alcoholic version, use dry ginger ale or sparkling apple cider. For a stronger cocktail, add 1 oz bourbon. Leftover cinnamon sugar can be stored in an airtight container for up to a month.
