  • One 12-ounce tube of refrigerated cinnamon rolls (with or without icing)
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar (optional)
  • 2 tablespoons butter, melted
  • Icing from the tube or homemade glaze for drizzling after baking (optional)

Instructions

  1. Lightly grease a 9×13-inch (23×33 cm) casserole dish with 2 tablespoons melted butter.
  2. Cut the refrigerated cinnamon rolls into quarters, including the icing if desired, and spread evenly in the prepared baking dish.
  3. In a large mixing bowl, whisk together 6 large eggs, 2 cups milk, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon salt, and 2 tablespoons brown sugar (if using) until fully combined and slightly frothy.
  4. Pour the custard mixture evenly over the cinnamon roll pieces, gently pressing some pieces down to soak up the custard.
  5. Cover the casserole tightly with aluminum foil or plastic wrap and refrigerate overnight or for at least 6 hours.
  6. Remove the casserole from the fridge about 20 minutes before baking. Preheat oven to 350°F (175°C).
  7. Bake uncovered for 40-45 minutes until the top is golden brown and the custard is set (a knife inserted should come out clean). Tent with foil if edges brown too quickly.
  8. Optionally, drizzle reserved or store-bought icing over the warm casserole after baking. Let cool for a few minutes before serving.

Notes

Use room temperature eggs and milk for better custard absorption. Do not skip the overnight soaking for best texture. If edges brown too fast, tent with foil. Let casserole rest 5-10 minutes after baking before slicing. Optional add-ins include chopped nuts or fresh berries. For dairy-free or vegan versions, substitute eggs with flax or chia eggs and use plant-based milk and cinnamon rolls.
