Easy Creamy Crockpot Chicken and Wild Rice Soup

This creamy, comforting soup is made in the slow cooker with tender chicken, nutty wild rice, and a velvety broth. It’s a set-it-and-forget-it meal that feels like a hug in a bowl, perfect for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium)
  • 1 cup uncooked wild rice blend
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary, crushed
  • 2 bay leaves
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your veggies: Dice onion, carrots, and celery into 1/2-inch pieces. Mince garlic.
  2. Layer the vegetables (onion, carrots, celery, garlic) in the bottom of a 6-quart slow cooker. Place chicken breasts on top.
  3. Sprinkle uncooked wild rice blend over the chicken and vegetables. Pour chicken broth over everything.
  4. Add dried thyme, crushed rosemary, bay leaves, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir gently to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is fork-tender and rice is tender.
  6. Remove chicken to a cutting board and shred with two forks. Discard bay leaves from the pot.
  7. Return shredded chicken to the slow cooker. In a small bowl, whisk cornstarch with cold water to make a slurry. Pour slurry and heavy cream into the slow cooker and stir gently.
  8. Cover and cook on HIGH for 15-20 minutes until soup thickens. Taste and adjust salt and pepper as needed.
  9. Serve hot, garnished with fresh parsley if desired.

Notes

For a dairy-free version, substitute heavy cream with full-fat coconut milk. To make it even easier, use rotisserie chicken added in the last 30 minutes. The soup thickens as it sits; add a splash of broth when reheating.
