These crispy baked buffalo cauliflower bites are a game-day favorite, offering a shatteringly crisp exterior with a tender, almost buttery inside. They’re baked, not fried, and come together in about 35 minutes with simple pantry ingredients.

  • 1 cup all-purpose flour
  • 1/2 cup milk (any kind works)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons melted butter (or vegan butter)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the cauliflower: Remove leaves and tough core, cut into bite-sized florets (1 to 1.5 inches). Rinse and pat very dry with a clean towel.
  3. Make the dry coating mixture: In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, black pepper, and salt.
  4. Prepare the wet mixture: In another medium bowl, pour in the milk.
  5. Set up dipping station: Arrange bowls in order: cauliflower florets, dry flour mixture, milk, dry flour mixture again.
  6. Coat the cauliflower: Working in batches of 5-6 florets, toss in dry flour mixture, shake off excess. Dip quickly into milk, let excess drip off. Toss back into dry flour mixture until fully coated. Place on prepared baking sheet in a single layer, leaving space between each.
  7. Drizzle with olive oil: Lightly drizzle oil over coated florets; use hands or brush to coat gently.
  8. Bake for 20-25 minutes: Bake on middle rack for 10 minutes, then flip each floret. Bake another 10-15 minutes until golden brown and crispy.
  9. Make the buffalo sauce: While cauliflower bakes, combine hot sauce and melted butter in a small bowl; whisk until smooth.
  10. Toss with sauce: Let baked cauliflower cool on sheet for 2 minutes, then transfer to a large bowl. Pour sauce over and toss gently until evenly coated.
  11. Serve immediately: Transfer to a platter with desired dips and garnishes.

Notes

The double-coating method is key for a crispy crust. Pat cauliflower very dry to avoid soggy coating. For extra heat, add 1/2 teaspoon cayenne to flour mixture. For milder flavor, increase melted butter in sauce. Best served immediately; leftovers can be reheated in oven or air fryer.
