Easy Ham and Cheese Croissant Pockets: Best 30-Minute Brunch

Buttery, flaky crescent roll pockets filled with a creamy, savory ham and Gruyère cheese mixture. Ready in about 30 minutes, they are perfect for a lazy weekend brunch, a quick weekday breakfast, or a crowd-pleasing snack.

  • 1 can (8 oz) refrigerated crescent roll dough
  • 4 oz cream cheese, softened
  • 4 oz cooked ham, thinly sliced or diced
  • 1/2 cup shredded Gruyère cheese
  • 1 tablespoon Dijon mustard
  • 1 large egg
  • 1 teaspoon water
  • Pinch of black pepper
  • Optional: 1 tablespoon finely chopped chives or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a small mixing bowl, combine the softened cream cheese, shredded Gruyère, Dijon mustard, and a pinch of black pepper. Mix with a fork until smooth and well combined.
  3. Fold the diced or sliced ham into the cream cheese mixture until evenly distributed.
  4. Unroll the crescent dough. If using perforated dough, separate into 8 triangles. If using sheet-style dough, cut into 8 rectangles or triangles.
  5. Place about 1 to 1.5 tablespoons of the filling in the center of each dough piece. Leave a small border around the edges.
  6. Fold the dough over the filling to create a triangle or rectangle. Press edges firmly with fingers, then crimp with a fork to seal.
  7. In a small bowl, whisk the egg with 1 teaspoon of water. Brush the tops of each pocket with the egg wash.
  8. Bake for 12 to 15 minutes, until puffed and deep golden brown. Rotate the baking sheet halfway through if needed.
  9. Let cool on the pan for 2 to 3 minutes, then transfer to a cooling rack. Cool for at least 5 minutes before serving.
  10. If desired, sprinkle with chopped chives or parsley. Serve warm.

Notes

Keep the dough cold for easier handling. Do not overfill to prevent leaking. Seal edges well with a fork. For best results, bake on the middle rack. Let cool 5 minutes before eating to avoid burning.
