Easy Homemade Pumpkin Spice Coffee Syrup (3 Ingredients)

This 3-ingredient, 5-minute pumpkin spice coffee syrup is the real deal—simple, sweet, and spiced exactly the way you want it. No artificial flavors or preservatives, just pure autumn magic for your coffee, oatmeal, pancakes, and more.

  • 1 cup (240 ml) pure maple syrup
  • 1/4 cup (60 g) pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon pumpkin pie spice

Instructions

  1. In a small saucepan, combine 1 cup maple syrup, 1/4 cup pumpkin puree, and 1 teaspoon pumpkin pie spice. Whisk together until the pumpkin is mostly incorporated (it will look lumpy).
  2. Place the saucepan over medium-low heat. Heat gently, stirring frequently with a whisk, until the pumpkin starts to dissolve into the syrup (about 2 minutes).
  3. Once small bubbles form around the edges (after 3-4 minutes), reduce heat to low. Let simmer gently for another 1-2 minutes, stirring occasionally, until smooth and slightly thickened (coats the back of a spoon but is still pourable).
  4. Optional: Pour through a fine-mesh strainer into a glass jar for a perfectly smooth syrup.
  5. Let the syrup cool completely at room temperature (about 15-20 minutes) before sealing with a lid. Refrigerate after cooling.

Notes

Use low heat to avoid scorching the maple syrup. Whisk constantly to prevent pumpkin clumps. Let syrup cool completely before refrigerating to avoid condensation. If syrup thickens too much, add a tablespoon of water and whisk over low heat. Store in the refrigerator for up to 2 weeks. Can be frozen in ice cube trays for up to 3 months.
