A quick and easy sheet pan dinner featuring sticky-sweet honey garlic chicken thighs and caramelized roasted vegetables, all cooked on one pan in 30 minutes. Perfect for busy weeknights when you want a delicious meal with minimal effort and cleanup.

  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • Salt and black pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • Sesame seeds and green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. In a medium bowl, whisk together honey, soy sauce, olive oil, and minced garlic. Add red pepper flakes if desired.
  3. Cut broccoli into bite-sized florets and slice bell pepper into 1/2-inch strips.
  4. Place chicken thighs in the bowl with the glaze and turn to coat evenly. Let sit for 5 minutes.
  5. Arrange glazed chicken thighs in a single layer on one side of the sheet pan. Spread broccoli and bell pepper on the other side. Pour any remaining glaze over chicken and veggies.
  6. Roast for 20-25 minutes, flipping the chicken and tossing the veggies at the 12-minute mark. Chicken is done when internal temperature reaches 165°F (74°C).
  7. Optional: Broil for 2-3 minutes for extra caramelization, watching closely to prevent burning.
  8. Let rest for 5 minutes. Garnish with sesame seeds and sliced green onions if desired. Serve hot.

Notes

Don’t skip flipping the chicken halfway through for even cooking and caramelization. Pat chicken dry before glazing for better browning. Taste the glaze and adjust sweetness or saltiness to your preference. For extra sticky glaze, simmer leftover sauce on the stove while chicken roasts. Leftovers keep in the fridge for up to 4 days and reheat well in a 350°F oven for 10 minutes.
