A lighter, healthier twist on classic Chex mix, perfect for Friendsgiving gatherings. This savory ranch-flavored snack uses olive oil and less butter for a satisfying crunch without the greasy aftermath.

Ingredients

Scale
  • 3 cups Rice Chex cereal
  • 3 cups Corn Chex cereal
  • 2 cups Wheat Chex cereal
  • 1 cup mini pretzel twists
  • 1 cup whole wheat goldfish crackers
  • ½ cup raw almonds (unsalted)
  • ½ cup raw pumpkin seeds (pepitas)
  • 3 tablespoons olive oil (extra virgin)
  • 2 tablespoons unsalted butter (melted)
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika (optional)
  • ¼ teaspoon black pepper (freshly ground)
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper if desired.
  2. In a large mixing bowl, combine Rice Chex, Corn Chex, Wheat Chex, mini pretzels, goldfish crackers, almonds, and pumpkin seeds. Toss gently to distribute.
  3. In a small bowl, whisk together olive oil, melted butter, dry ranch seasoning mix, garlic powder, onion powder, smoked paprika (if using), black pepper, and cayenne (if using) until well combined.
  4. Pour the coating evenly over the dry mix. Gently toss with a spatula or your hands until every piece is coated, about 2-3 minutes.
  5. Spread the mixture in an even, single layer on the prepared baking sheet. Use two sheets if needed to avoid overcrowding.
  6. Bake for 45 minutes, stirring every 15 minutes to ensure even toasting.
  7. After 45 minutes, check for doneness. The mix should be dry and lightly golden. If still soft, bake for an additional 5-10 minutes.
  8. Cool completely on the baking sheet for at least 30 minutes before storing. The mix will continue to crisp as it cools.

Notes

For best flavor, let the mix sit overnight in an airtight container. The mix can be stored at room temperature for up to 2 weeks or frozen for up to 3 months. For a gluten-free version, swap Wheat Chex for additional Rice or Corn Chex and use gluten-free pretzels. For a dairy-free version, replace butter with additional olive oil or vegan butter.
