These easy mini turkey club pinwheels are a quick, tasty lunchbox staple featuring layers of smoky turkey, crispy bacon, fresh veggies, and creamy mayo rolled in flour tortillas. Perfect for kids and adults alike, they come together in under 20 minutes and are ideal for school, picnics, or on-the-go snacks.

  • 8 large flour tortillas (10-inch size works best for rolling)
  • 8 oz sliced turkey breast (smoked turkey preferred)
  • 6 slices thick-cut bacon, cooked crisp and drained
  • 1 cup shredded iceberg lettuce
  • 1 medium tomato, thinly sliced
  • 4 oz cheddar cheese, sliced thin
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard (optional)
  • Salt and black pepper, to taste

Instructions

  1. Cook the thick-cut bacon slices in a skillet over medium heat until crisp, about 6–8 minutes, turning occasionally. Drain on paper towels and let cool. Alternatively, bake bacon on a foil-lined baking sheet at 400°F (200°C) for 15–20 minutes.
  2. Wash and dry the lettuce thoroughly, then shred into bite-sized pieces. Slice the tomato thinly, removing seeds if desired. Set aside.
  3. In a small bowl, combine mayonnaise and Dijon mustard. Season with salt and pepper to taste.
  4. Lay one flour tortilla flat on a clean surface. Spread about 2 tablespoons of the mayo-mustard mixture evenly over the surface, leaving a small border around the edges.
  5. Layer 2 oz (about 4 slices) of turkey breast evenly over the spread. Add two bacon slices, then shredded lettuce, tomato slices, and finally a slice or two of cheddar cheese.
  6. Roll the tortilla tightly but gently to avoid tearing. Wrap the roll tightly in plastic wrap or parchment paper and refrigerate for at least 20 minutes.
  7. After chilling, unwrap and use a sharp knife to cut each roll crosswise into 1-inch thick pinwheels. Each tortilla should yield about 6–8 pinwheels.
  8. Arrange pinwheels on a serving platter or pack into lunchboxes. Serve chilled or at room temperature.

Notes

Use thick-cut bacon for extra crunch and to prevent sogginess. Chill the rolled tortillas before slicing to help them hold their shape. Use a sharp knife to slice pinwheels cleanly. Pat lettuce and tomato dry to avoid soggy wraps. Mayonnaise can be swapped with Greek yogurt or dairy-free mayo for a lighter or dairy-free option. Gluten-free tortillas can be used to make this recipe gluten-free.
