These fun, protein-packed mini turkey meatball skewers are perfect for lunchboxes. Juicy turkey meatballs threaded with mozzarella and cherry tomatoes on short skewers make a healthy, kid-approved meal that’s quick to prepare and endlessly adaptable.

Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean)
  • ½ cup (60g) breadcrumbs (plain or Italian-style)
  • ¼ cup (25g) grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons (30ml) milk (dairy, oat, or almond)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2024 mini mozzarella balls (ciliegine or bocconcini)
  • 2024 cherry tomatoes
  • Short 4-inch wooden or silicone skewers

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper. If using wooden skewers, soak them in water for 10 minutes to prevent burning or splintering.
  2. In a medium mixing bowl, combine ground turkey, breadcrumbs, Parmesan, egg, milk, minced garlic, oregano, salt, and pepper. Mix gently with your hands or a spatula until just combined—do not overmix.
  3. Using a 1-tablespoon cookie scoop or your hands, roll the mixture into small balls about 1 inch in diameter. You should get 20-24 mini meatballs. Place them on the prepared baking sheet, spacing about 1 inch apart.
  4. Brush the tops lightly with olive oil. Bake for 12-15 minutes, until cooked through and internal temperature reaches 165°F (74°C). Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
  5. Once meatballs are cool enough to handle, thread them onto skewers in a pattern: mini mozzarella ball, meatball, cherry tomato, repeat. Each short skewer holds 3-4 pieces.
  6. Place assembled skewers in a lunchbox container. Store in an airtight container in the fridge for up to 4 days. Pack cold—they are delicious at room temperature or straight from the fridge.

Notes

Don’t overmix the meat mixture to keep meatballs tender. Let meatballs cool completely before assembling skewers if meal-prepping. For younger kids, serve deconstructed in a bento box. Freeze baked meatballs separately for up to 3 months.
