  • 1 cup (240 ml) whole milk, room temperature
  • ¾ cup (120 g) rainbow sprinkles (sturdy jimmies or nonpareils recommended)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line them with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, and salt in a large bowl until evenly combined.
  3. Using an electric mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3 to 5 minutes.
  4. Add the eggs one at a time, beating well after each addition to create a smooth batter.
  5. Mix in the vanilla extract briefly to combine.
  6. With the mixer on low speed, alternately add the dry ingredients in three parts and the milk in two parts, starting and ending with the flour mixture. Mix just until combined after each addition.
  7. Gently fold the rainbow sprinkles into the batter using a rubber spatula to avoid color bleeding.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 30-35 minutes, rotating pans halfway through. The cake is done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely before frosting.
