  • 1/2 cup (125g) natural peanut butter (creamy or chunky)
  • 1/3 cup (113g) honey
  • 1/2 cup (90g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed (optional but recommended)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a baking sheet or tray with parchment paper or a silicone mat.
  2. In a mixing bowl, combine rolled oats, ground flaxseed, and salt. Optionally pulse in a food processor for about 10 seconds for a smoother texture.
  3. Stir in peanut butter, honey, and vanilla extract until the mixture is sticky and well combined.
  4. Gently fold in mini chocolate chips without overmixing.
  5. Roll the mixture into 1-inch (2.5 cm) balls using your hands or a small cookie scoop. If too sticky, wet your hands or chill the mixture for 10 minutes before rolling.
  6. Place the formed bites on the lined tray and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
