  • 1 cup (250g) natural creamy peanut butter (almond or sunflower butter as substitute)
  • 1/3 cup (115g) honey
  • 1/2 cup (90g) mini semi-sweet chocolate chips
  • 1 tsp vanilla extract
  • 2 tbsp flaxseed meal (optional)
  • Pinch of salt

Instructions

  1. Line an 8×8 inch (20×20 cm) pan with parchment paper, leaving some overhang for easy lifting. (5 minutes)
  2. In a large mixing bowl, combine 1 cup peanut butter, 1/3 cup honey, 1 tsp vanilla extract, and a pinch of salt. Stir gently until smooth and well blended. (3-4 minutes)
  3. Add 2 cups rolled oats and 2 tbsp flaxseed meal if using. Mix until oats are evenly coated and mixture is sticky but holds together. (3 minutes)
  4. Fold in 1/2 cup mini chocolate chips, reserving a small handful for topping. (1 minute)
  5. Transfer mixture to the lined pan and press firmly and evenly using a spatula or lightly greased hands. (5 minutes)
  6. Sprinkle reserved chocolate chips on top and press lightly into the surface. (1 minute)
  7. Chill in the refrigerator for at least 1 hour or until firm. (1 hour)
  8. Lift the set mixture from the pan using parchment overhang and cut into 1-inch (2.5 cm) squares or bite-sized bars. (5 minutes)
  9. Store in an airtight container in the refrigerator for up to one week or freeze for longer storage.

Notes

Use room temperature peanut butter for easier mixing. Press mixture firmly into the pan to help bars hold shape. Chilling is essential for setting. Mini chocolate chips work best to avoid uneven melting. Adjust texture by adding more honey or peanut butter if too dry, or more oats if too sticky. For nut allergies, substitute peanut butter with sunflower seed butter and use dairy-free chocolate chips.
