These Easy Peppermint Bark Chocolate Chip Cookies are a happy accident turned holiday favorite. Buttery, chewy cookies loaded with semi-sweet chocolate chips and crushed peppermint bark, ready in about 20 minutes.

  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup crushed peppermint bark (about 6 oz)
  • Optional: flaky sea salt for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar together on medium speed for 2-3 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Add vanilla extract and beat for another 30 seconds.
  4. In a separate medium bowl, whisk together flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low speed in three batches, scraping down the sides between additions. Mix just until flour disappears.
  6. Gently fold in semi-sweet chocolate chips and crushed peppermint bark with a rubber spatula until just combined.
  7. Scoop rounded balls of dough (about 1.5 tablespoons each) onto prepared baking sheets, spacing 2 inches apart. Optionally flatten slightly with palm of hand.
  8. If using, sprinkle a tiny pinch of flaky sea salt on top of each dough ball.
  9. Bake one sheet at a time for 10-12 minutes, until edges are golden brown and centers are still slightly soft.
  10. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. Don’t overcrush the peppermint bark; aim for pea-sized pieces. If dough is too sticky, chill for 15 minutes before baking. Bake one sheet at a time for even baking. Cookies taste even better the next day.
