  • 34 stalks celery, cut into sticks
  • 1 large red bell pepper, seeded and cut into strips
  • 1 large yellow bell pepper, seeded and cut into strips
  • 1 medium English cucumber, cut into sticks
  • 1 cup cherry tomatoes, halved or left whole
  • 1 cup purple cabbage, thinly sliced
  • 1 cup broccoli florets, cut into bite-sized pieces
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 teaspoon fresh lemon juice

Instructions

  1. Make the Ranch Dip: In a small mixing bowl, combine 1 cup Greek yogurt, 2 tablespoons buttermilk, 1 tablespoon chopped fresh dill, 1 tablespoon chopped fresh chives, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon fresh lemon juice. Whisk until smooth. Taste and adjust seasoning. Cover and refrigerate while you prep the veggies.
  2. Prep the Carrots: Peel 3-4 medium carrots, then cut them into sticks about 3 inches long and 1/2 inch thick.
  3. Prep the Celery: Rinse 3-4 celery stalks and cut them into sticks the same size as the carrots. Remove strings with a vegetable peeler if needed.
  4. Prep the Bell Peppers: Cut the tops off 1 red and 1 yellow bell pepper, remove seeds and white membranes, and cut into strips about 1/2 inch wide.
  5. Prep the Cucumber: Cut 1 English cucumber into sticks about 3 inches long and 1/2 inch thick.
  6. Prep the Remaining Veggies: Halve 1 cup cherry tomatoes if large. Cut 1 cup purple cabbage into thin slices. Cut 1 cup broccoli florets into bite-sized pieces.
  7. Assemble the Lunchbox: Arrange the vegetable sticks and pieces in your lunchbox container by color to create a rainbow effect. Place a small dip cup filled with ranch in the center or on the side.
  8. Pack and Serve: Keep the dip and veggies separate until ready to eat. Store dip in a separate small container if packing for lunch.

Notes

For best crunch, choose firm vegetables. Cut uniformly for even dipping. Ranch dip can be made up to 3 days ahead. Store cut vegetables with a damp paper towel to keep crisp. For dairy-free, use plant-based yogurt and buttermilk alternative.
