  • 4 oz salami, such as Genoa or soppressata, sliced
  • 2 oz capicola or your favorite spicy dry-cured ham (optional)
  • 4 oz brie, at room temperature
  • 3 oz manchego, sliced into thin wedges
  • 2 oz aged gouda, cubed
  • 1/4 cup honey
  • 1/4 cup fig jam or membrillo (quince paste)
  • 1/4 cup cornichons or small pickles
  • 1/4 cup mixed olives (kalamata and castelvetrano)
  • 1/4 cup roasted almonds or Marcona almonds
  • 1/4 cup dried figs or apricots
  • 1 cup fresh grapes (red or green)
  • Fresh rosemary sprigs for garnish (optional)
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • Olive oil for brushing the baguette

Instructions

  1. Prep the baguette (2 minutes): Slice the baguette into thin rounds, about 1/4-inch thick. Brush each slice lightly with olive oil and toast in a toaster oven or under the broiler for 2-3 minutes, until golden brown at the edges. Set aside to cool.
  2. Soften the cheese (do this first): Take the brie out of the fridge and let it sit at room temperature while you prep everything else.
  3. Slice the manchego and gouda (2 minutes): Cut the manchego into thin triangles. Cube the aged gouda into bite-sized pieces.
  4. Arrange the meats (2 minutes): Fold each slice of prosciutto loosely into ribbons or ruffles and place in nests on the board. Add the salami slices, overlapping slightly in a fan pattern. Add the capicola in small piles if using.
  5. Add the cheeses (1 minute): Place the brie whole or halved on the board. Arrange the manchego fans and gouda cubes around it.
  6. Add the accompaniments (2 minutes): Spoon the fig jam into a small bowl and place on the board. Drizzle the honey over the brie or manchego. Scatter the cornichons, olives, almonds, and dried figs in small piles around the board.
  7. Add the fresh elements (1 minute): Tuck small clusters of grapes into empty spaces. If using rosemary sprigs, tuck them under the cheese or between the meat folds.
  8. Add the crackers (1 minute): Arrange the toasted baguette slices and any additional crackers around the edges of the board.
  9. Final touches (30 seconds): Fill any bare spots with extra almonds or grapes. Drizzle a tiny bit more honey if desired. Sprinkle a pinch of flaky sea salt over the cheese if desired.
  10. Serve immediately: Enjoy while the baguette is crisp and the cheese is at room temperature.

Notes

Let the brie come to room temperature for best texture. The board is best served immediately. For a dairy-free version, use vegan cheeses. For gluten-free, use gluten-free crackers or cucumber slices.
