A quick and comforting fall dinner featuring savory Italian sausage roasted with sweet apples and caramelized butternut squash on one sheet pan.

  • 1 pound Italian sausage links (mild or spicy)
  • 1 medium butternut squash (about 2 pounds), peeled, seeded, and cut into 1-inch cubes
  • 2 medium apples (firm varieties like Honeycrisp or Granny Smith), cored and sliced into wedges
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the butternut squash, remove seeds, and cut into 1-inch cubes.
  3. Core and slice the apples into wedges about the same size as the squash cubes; leave the skin on.
  4. In a large mixing bowl, toss the squash and apple pieces with olive oil, chopped rosemary, minced garlic, salt, and pepper until evenly coated.
  5. Spread the seasoned squash and apples in an even layer on a large rimmed baking sheet, leaving space for the sausage links.
  6. Place the sausage links on the sheet pan alongside the veggies and apples. Optionally, slice the sausage into rounds for crisper edges.
  7. Drizzle the maple syrup over the apples and squash.
  8. Roast in the preheated oven for 30-35 minutes, turning everything halfway through with tongs or a spatula, until the squash is tender but not mushy, apples are soft with some bite, and sausage is cooked through with browned, crisp skin.
  9. Remove from oven and squeeze fresh lemon juice over the dish.
  10. Serve hot, straight from the pan.

Notes

If sausage browns too quickly, tent loosely with foil for the last 10 minutes. Toss gently halfway through roasting to avoid breaking the squash and apples. For a leaner option, use turkey or chicken sausage. This recipe is naturally gluten-free but check sausage labels to confirm. Leftovers keep well refrigerated for up to 3 days and freeze for up to a month.
