Easy Slow Cooker White Bean Turkey Chili

A hearty, hands-off chili made with lean ground turkey, creamy white beans, and smoky spices. Perfect for busy weeknights, meal prep, or feeding a crowd.

  • 1 lb (450g) ground turkey (93/7 lean)
  • 2 cans (15 oz / 425g each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz / 411g) diced tomatoes (fire-roasted preferred), undrained
  • 2 tablespoons tomato paste
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until no longer pink and starting to brown (5-7 minutes). Transfer to slow cooker.
  2. In the same skillet, add diced onion and cook until softened (2-3 minutes). Add minced garlic and cook 30 seconds until fragrant. Scrape into slow cooker.
  3. Add chili powder, cumin, smoked paprika, and oregano to the hot skillet. Stir for 30 seconds until fragrant. Deglaze with a splash of chicken broth, scraping up browned bits, then pour into slow cooker.
  4. Add drained white beans, diced tomatoes with juices, tomato paste, and remaining chicken broth to the slow cooker. Stir until tomato paste is mostly dissolved.
  5. Season with 1 teaspoon salt and ½ teaspoon black pepper. Stir well.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until flavors meld and chili thickens slightly.
  7. Taste and adjust salt and pepper as needed. Serve hot with desired toppings.

Notes

For a thicker chili, mash some beans against the side of the slow cooker or cook uncovered on HIGH for 20-30 minutes. Leftovers taste even better the next day. Freezes well for up to 3 months.
