  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 1/4 cup (60ml) bourbon (e.g., Maker’s Mark or Buffalo Trace)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons (28g) unsalted butter, softened
  • 2 cloves garlic, minced
  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Remove the ham steaks from packaging and pat dry with paper towels. Let them sit at room temperature for 10 minutes before cooking.
  2. In a small bowl, whisk together brown sugar, bourbon, Dijon mustard, apple cider vinegar, softened butter, minced garlic, black pepper, and smoked paprika or cayenne if using. Set aside.
  3. Heat a cast iron or heavy skillet over medium heat. Add a small pat of butter or a light coating of oil to prevent sticking.
  4. Add the ham steaks and cook for about 3-4 minutes per side (total 6-8 minutes), until golden brown and heated through with a caramelized crust.
  5. Reduce heat to low, pour the glaze evenly over the ham steaks in the pan. Spoon the glaze over the steaks as it thickens, cooking for another 2-3 minutes until sticky and well-coated.
  6. Check that the internal temperature reaches 140°F (60°C) for safe serving if concerned.
  7. Transfer the ham steaks to a plate and let rest for a few minutes to allow the glaze to set slightly before serving.

Notes

Pat ham steaks dry before cooking to ensure a good sear. Use medium heat to avoid burning the glaze. Add a splash of water or extra bourbon if glaze thickens too much. For dairy-free, substitute butter with coconut oil. Glaze thickens and flavor deepens if leftovers marinate overnight.
