Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking pan with butter or nonstick spray.
  2. In a large bowl, combine the red velvet cake mix, eggs, vegetable oil, and buttermilk. Beat on medium speed with an electric mixer or whisk vigorously by hand for about 2 minutes until smooth and combined.
  3. Pour the batter evenly into the prepared pan and tap gently on the counter to release air bubbles.
  4. Bake for 30-35 minutes. Insert a toothpick in the center around 30 minutes; it should come out with a few moist crumbs but no wet batter.
  5. Let the cake cool for 10 minutes until warm but not hot.
  6. Use a wooden skewer or wooden spoon handle to poke holes about 1 inch apart all over the cake.
  7. Spread the cream cheese frosting evenly over the warm cake to allow it to seep into the holes.
  8. Sprinkle the Pop Rocks candy immediately over the frosted cake just before serving to keep the crackle effect.
