Juicy chicken thighs marinated in a sticky honey garlic glaze, grilled to perfection and served with a fresh, zesty peach salsa that adds a bright contrast.

  • 6 boneless, skin-on chicken thighs (about 2 lbs / 900 g)
  • 1/4 cup honey (85 g)
  • 4 garlic cloves, minced
  • 2 tbsp soy sauce (30 ml), low sodium preferred
  • 2 tbsp extra virgin olive oil (30 ml)
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • 2 medium ripe peaches, diced
  • 1/2 cup red bell pepper, diced (75 g)
  • 1/4 cup red onion, finely chopped (40 g)
  • 1 small jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped (8 g)
  • 1 tbsp fresh lime juice (15 ml)
  • Salt, to taste
  • Optional: a drizzle of olive oil for silkiness

Instructions

  1. In a medium bowl, whisk together honey, minced garlic, soy sauce, olive oil, salt, and freshly ground black pepper.
  2. Add the chicken thighs and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes (15 minutes if short on time).
  3. While the chicken marinates, combine diced peaches, red bell pepper, red onion, jalapeño, and chopped cilantro in a bowl.
  4. Add fresh lime juice, a pinch of salt, and toss gently. Let sit at room temperature to let flavors mingle.
  5. Preheat grill to medium-high heat (around 400°F / 205°C). If using a grill pan, heat over medium-high on the stove.
  6. Place chicken thighs skin-side down on the grill. Cook undisturbed for 7-8 minutes until skin is crisp and caramelized.
  7. Flip chicken and grill for another 7-8 minutes or until internal temperature reaches 165°F (74°C). Watch for flare-ups and use a spray bottle to control flames.
  8. Remove chicken from grill and let rest for 5 minutes to redistribute juices.
  9. Serve chicken with a generous scoop of fresh peach salsa on top or on the side. Optionally, squeeze extra lime juice over everything.

Notes

Pat chicken lightly before grilling to reduce flare-ups. Use skin-on thighs for juiciness and crisp skin. Moderate grill heat to prevent burning the honey glaze. Drain excess liquid from salsa if peaches are very juicy. Salsa flavors meld after a day; add jalapeño and cilantro fresh before serving for best texture.
