  • 2 tablespoons honey (or maple syrup for vegan option)
  • 1 teaspoon vanilla extract
  • 1 cup (150 grams) fresh berries (blueberries, raspberries, strawberries, roughly chopped)
  • 1/4 cup (30 grams) rainbow sprinkles
  • 1/4 cup (30 grams) chopped nuts (optional, toasted almonds or pistachios)

Instructions

  1. Mix the yogurt base: In a medium bowl, combine 2 cups (475 ml) of Greek yogurt with 2 tablespoons of honey and 1 teaspoon of vanilla extract. Stir until smooth and evenly blended.
  2. Prepare the baking sheet: Line a 9×13-inch (23×33 cm) baking sheet with parchment paper or a silicone mat, ensuring it is flat and wrinkle-free.
  3. Spread the yogurt: Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4 inch (6 mm) thickness using an offset spatula or spoon.
  4. Add the toppings: Scatter 1 cup (150 grams) of mixed fresh berries evenly over the yogurt. Sprinkle 1/4 cup (30 grams) of rainbow sprinkles on top. Add chopped nuts if using, pressing gently into the yogurt.
  5. Freeze: Place the baking sheet in the freezer uncovered and freeze for at least 4 hours or overnight until firm and solid.
  6. Break into pieces and serve: Remove from freezer, lift the bark off the parchment paper, and break or cut into shards or bite-sized pieces. Serve immediately or store in an airtight container in the freezer.

Notes

Use full-fat Greek yogurt for best creamy texture. Substitute maple syrup for honey to make vegan. Choose sprinkles that hold color well when frozen and are gluten-free if needed. Spread yogurt evenly to avoid uneven freezing. Freeze uncovered to keep bark crisp. Let bark sit at room temperature for a couple of minutes before breaking to avoid excessive cracking.
