Fresh Grilled Nectarines with Honey Ricotta and Pistachios

A quick and easy summer dessert featuring caramelized grilled nectarines topped with creamy honey ricotta and crunchy pistachios. Perfect for backyard barbecues or a simple sweet treat.

  • 4 medium fresh nectarines, ripe but firm
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons honey, plus extra for drizzling
  • 1/4 cup shelled and roughly chopped pistachios
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Preheat your grill or grill pan to medium-high heat, about 400°F (205°C).
  2. Rinse and dry nectarines. Cut each nectarine in half and gently remove the pits. Brush the cut sides lightly with olive oil.
  3. Place nectarines cut side down on the hot grill. Grill for 3-4 minutes until grill marks appear and fruit softens slightly but holds shape. Flip and grill for an additional 2 minutes on the skin side.
  4. While nectarines grill, combine ricotta cheese, honey, lemon juice, and a pinch of salt in a mixing bowl. Whisk until smooth and creamy.
  5. Roughly chop pistachios and set aside.
  6. Remove nectarines from grill and let cool for a minute or two. Spoon a generous dollop of honey ricotta onto each half, then sprinkle with chopped pistachios.
  7. Drizzle a little extra honey over the assembled dessert before serving.

Notes

Watch nectarines closely on the grill to avoid over-softening. Use firm but ripe nectarines for best results. You can substitute peaches or plums for nectarines. For a vegan version, replace ricotta with a coconut cream and almond butter blend and use maple syrup instead of honey.
