A fresh and simple summer salad featuring smoky grilled peaches paired with creamy burrata cheese and a sweet-tangy honey balsamic drizzle. Perfect for quick meals or entertaining.

Ingredients

Scale
  • 34 ripe peaches, halved and pitted (clingstone peaches work great for grilling)
  • 8 ounces burrata cheese, fresh and creamy
  • 4 cups mixed salad greens (arugula, baby spinach, or spring mix)
  • 2 tablespoons honey, preferably raw or wildflower
  • 2 tablespoons balsamic vinegar, aged preferred
  • 2 tablespoons extra virgin olive oil
  • A handful fresh basil leaves, roughly torn
  • Sea salt, to taste (flaky sea salt like Maldon recommended)
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly brush the peach halves with olive oil to prevent sticking and help caramelize the sugars.
  2. Place the peaches cut-side down on the grill. Grill for 3-4 minutes until you see nice char marks and the peaches start to soften but still hold their shape. Flip and grill another 2 minutes on the skin side. Remove and set aside to cool slightly.
  3. While the peaches grill, prepare the honey balsamic drizzle by whisking together honey, balsamic vinegar, olive oil, and lemon juice (if using) in a small bowl or jar. Taste for balance.
  4. In a large mixing bowl, toss the salad greens gently with a small drizzle of the honey balsamic dressing, reserving most of the dressing for drizzling on top later.
  5. Arrange the dressed greens on your serving platter, then tear the burrata into chunks and scatter it over the salad.
  6. Slice the grilled peaches into wedges and place them artfully on top of the greens and burrata.
  7. Drizzle the remaining honey balsamic dressing generously over the top, then sprinkle with torn basil leaves, flaky sea salt, and freshly ground black pepper.
  8. Serve immediately to enjoy the contrast of warm peaches and creamy cheese with the fresh greens.

Notes

Grill peaches carefully to avoid burning; oil peaches before grilling to help caramelize sugars and prevent sticking. Tear burrata gently to keep creamy center intact. Prepare dressing while peaches grill to save time. Serve immediately for best texture and flavor. Leftover components should be stored separately and assembled fresh.
