  • 1 cup orzo pasta (about 200g)
  • 2 cups water or low-sodium chicken broth (480ml)
  • Juice and zest of 1 large lemon
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt and fresh ground black pepper to taste
  • 2 tablespoons chopped fresh parsley or basil
  • 12 cherry or grape tomatoes
  • 12 small fresh mozzarella balls (bocconcini or ciliegine size)
  • 12 fresh basil leaves
  • 1 tablespoon balsamic glaze or reduction
  • 1 tablespoon olive oil (for drizzling)
  • Salt and pepper to taste
  • 12 small wooden skewers or toothpicks

Instructions

  1. Bring 2 cups (480ml) of water or chicken broth to a boil in a medium saucepan. Add a pinch of salt, then pour in 1 cup (200g) of orzo pasta. Stir occasionally to prevent sticking. Cook for 8–10 minutes until the orzo is tender but still slightly firm (al dente). Drain well using a colander.
  2. While the orzo cooks, zest and juice 1 large lemon. In a small bowl, whisk together the lemon juice, lemon zest, 2 tablespoons of olive oil, salt, and pepper until combined.
  3. Return the drained orzo to the saucepan or a mixing bowl. Pour the lemon dressing over it and stir well to coat evenly. Add 2 tablespoons of grated Parmesan cheese and 2 tablespoons of chopped fresh parsley or basil. Mix gently until everything is combined and the cheese melts slightly. Taste and adjust salt and pepper as needed. Let it cool slightly before packing.
  4. On each skewer or toothpick, thread one cherry tomato, one fresh basil leaf (folded if large), and one mozzarella ball. Repeat until all skewers are assembled.
  5. Lay the skewers on a plate and drizzle 1 tablespoon olive oil and 1 tablespoon balsamic glaze over the top. Sprinkle lightly with salt and pepper.
  6. Place the lemon orzo in one compartment or container. Arrange the Caprese skewers separately to avoid squishing or juice leakage.
  7. Optionally, add fresh fruit like apple slices or berries, or a crunchy side like veggie chips for variety.

Notes

Cook orzo in broth for extra flavor. Let orzo cool before packing to avoid sogginess. Drizzle balsamic glaze just before serving or pack separately to keep mozzarella from getting soggy. Use firm tomatoes and dry basil leaves for best results. For vegan option, substitute mozzarella and Parmesan with plant-based alternatives. For gluten-free, use gluten-free orzo or quinoa.
