  • 8 ounces fresh burrata cheese
  • 1 cup fresh basil leaves, roughly torn
  • 2 tablespoons extra virgin olive oil
  • ½ cup balsamic vinegar
  • 1 tablespoon honey or maple syrup (optional)
  • Pinch of flaky sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the balsamic reduction: Pour ½ cup balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon honey or maple syrup if desired. Bring to a gentle boil, then reduce heat to low and simmer, stirring occasionally, until thickened to a syrupy consistency (about 10-12 minutes). Remove from heat and let cool slightly.
  2. Slice the peaches: Wash and dry peaches. Cut in half, remove pits, and slice thinly into ¼ inch (6 mm) half-moons, keeping slices uniform.
  3. Tear the burrata into chunks carefully to preserve the creamy interior. Arrange on a serving platter with spaces for peach slices.
  4. Assemble the salad by alternating layers of peach slices and burrata chunks. Scatter torn basil leaves over the top.
  5. Sprinkle flaky sea salt and freshly ground black pepper over the salad.
  6. Drizzle 2 tablespoons extra virgin olive oil evenly over the salad.
  7. Spoon the cooled balsamic reduction in slow, deliberate drizzles over the peaches and burrata.
  8. Serve immediately, or chill briefly (no more than 15 minutes) before serving. Avoid letting burrata get too cold.

Use ripe but firm peaches for best texture. Do not rush the balsamic reduction to avoid burning. Tear burrata gently by hand to preserve creaminess. Assemble salad just before serving for freshness. For dairy-free, substitute burrata with plant-based creamy cheese and use maple syrup instead of honey in the reduction. Leftovers can be refrigerated up to 24 hours; drain excess juice before serving again and let sit at room temperature for 15 minutes before eating.
