  • ½ cup (120 ml) store-bought or homemade classic hummus
  • 1 medium carrot, peeled and cut into sticks
  • ½ red bell pepper, sliced into thin strips
  • ½ cucumber, sliced into rounds or sticks
  • ½ cup cherry tomatoes, halved
  • ½ cup snap peas or green beans, trimmed
  • ½ cup (about 60g) sharp cheddar cheese, cut into small star shapes
  • ¼ cup whole grain crackers or pita chips (optional)
  • A few sprigs of parsley or dill for garnish (optional)

Instructions

  1. Wash all vegetables thoroughly. Peel the carrot and slice it into sticks about 3 inches (7.5 cm) long and ¼ inch (0.6 cm) thick.
  2. Slice the red bell pepper into thin strips about ½ inch (1.2 cm) wide.
  3. Cut cucumber into rounds or sticks depending on your preference.
  4. Halve the cherry tomatoes and trim the snap peas. The veggies should be bite-sized for easy dipping and eating.
  5. Slice the cheddar cheese into thin slices about ¼ inch (0.6 cm) thick.
  6. Use a mini star-shaped cookie cutter to press out cheddar stars. If the cheese is too soft, chill it for 10 minutes beforehand to make cutting easier. Set stars aside on parchment paper to prevent sticking.
  7. Place the hummus in a small container or compartment.
  8. Arrange the prepared vegetables around the hummus in a rainbow pattern to get a vibrant look.
  9. Nestle the cheddar stars in a corner or scatter them on top of the veggies for a playful touch.
  10. Add whole grain crackers or pita chips if using, and tuck in fresh herb sprigs for garnish.
  11. Cover the bento box tightly with a lid and refrigerate until ready to eat. Keep the hummus chilled to maintain freshness.

Chill cheddar cheese before cutting if too soft. Use a bento box with compartments to keep ingredients fresh and separate. Pack hummus last and keep refrigerated until eating.
