Fresh Watermelon Feta Mint Salad with Zesty Lime Twist

A quick, refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a zesty lime dressing for a perfect balance of flavors.

Ingredients

  • 4 cups watermelon, cubed (seedless or seeds removed)
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, chopped or torn
  • Juice of 2 medium limes (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave syrup (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse the watermelon under cool water. Cut into manageable sections and cube about 4 cups (600g) of juicy, seedless watermelon into roughly 1-inch cubes. Place in a large mixing bowl.
  2. Crumble 1 cup (150g) of feta cheese using a fork for texture. If feta is very salty, rinse and pat dry before adding.
  3. Rinse and dry 1/2 cup (about 10g) of fresh mint leaves. Tear or roughly chop and add to the watermelon bowl.
  4. In a small bowl or jar, whisk together juice of 2 medium limes (about 45 ml), 2 tablespoons (30 ml) extra virgin olive oil, and 1 teaspoon (5 ml) honey or agave syrup if using. Season with a pinch of salt and freshly ground black pepper. Adjust seasoning to taste.
  5. Pour the dressing over the watermelon, feta, and mint. Gently toss with a large spoon or salad tongs to coat evenly without breaking up the watermelon cubes.
  6. Taste and adjust seasonings if necessary. Let the salad sit for 5-10 minutes at room temperature to allow flavors to meld.
  7. Transfer to a serving bowl or platter. Garnish with whole mint leaves or a sprinkle of cracked black pepper if desired. Serve chilled or at room temperature.

Notes

Prepare the dressing ahead and keep chilled if short on time. Avoid making the salad too early to prevent it from becoming watery. Fresh lime juice is recommended for best flavor. For dairy-free version, substitute feta with firm tofu or vegan cheese. Fresh basil or cilantro can replace mint if needed.
