  • 1 small jalapeño pepper, seeded and finely chopped (leave seeds in for extra heat)
  • 2 tablespoons fresh lime juice
  • ¼ cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • ½ teaspoon salt
  • 1 teaspoon honey (optional)

Instructions

  1. Peel and dice the peaches into small pieces.
  2. Seed and finely chop the jalapeño pepper; include seeds if you prefer more heat.
  3. Finely dice the red onion and chop the fresh cilantro.
  4. In a mixing bowl, combine the diced peaches, jalapeño, red onion, and cilantro.
  5. Add the fresh lime juice, salt, and honey (if using) to the bowl.
  6. Gently stir all ingredients together until well mixed.
  7. Let the salsa sit for about 10 minutes before serving to allow flavors to meld.
