Soft, buttery sugar cookies sandwich a sweet, creamy filling bursting with colorful sprinkles inside and out. Perfect for quick back-to-school treats or after-school snacks that kids and adults love.

  • 1 ½ teaspoons pure vanilla extract
  • ½ cup unsalted butter, softened (113 g) for filling
  • 1 ½ cups powdered sugar (180 g)
  • 1 teaspoon vanilla extract for filling
  • ⅓ cup rainbow sprinkles (50 g), plus extra for rolling
  • 12 tablespoons milk or heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then add the vanilla extract until smooth and glossy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Use a cookie scoop or spoon to drop tablespoon-sized balls about 2 inches apart on the baking sheets. Lightly flatten each ball with your palm.
  7. Bake for 10-12 minutes until edges are set but centers still look slightly soft. Let cool completely on a wire rack.
  8. For the filling, beat softened butter until creamy. Gradually add powdered sugar, then vanilla extract. Add milk or cream to reach spreadable consistency.
  9. Fold in the rainbow sprinkles gently to avoid color bleeding.
  10. Spread about 1 tablespoon of filling on the flat side of one cookie. Top with another cookie and press gently to spread filling to the edges.
  11. Roll the edges of the sandwich in extra sprinkles for a festive touch.
  12. Chill assembled sandwiches in the fridge for 15 minutes to set the filling, or serve immediately for a softer texture.

Notes

If dough is too soft, chill for 15 minutes before scooping. Avoid overbaking to keep cookies soft. Fold sprinkles gently into filling to prevent color bleeding. Rolling edges in sprinkles adds crunch and festive look. Dough can be made ahead and refrigerated up to 3 days. Freeze assembled sandwiches up to 2 months.
