A quick and easy high-protein overnight oats recipe combining creamy Greek yogurt, chia seeds, and rolled oats for a nourishing and satisfying breakfast.

  • 1/2 cup (45 g) rolled oats
  • 1/2 cup (120 ml) Greek yogurt (plain, full-fat or low-fat)
  • 1 tablespoon (15 g) chia seeds
  • 1/2 cup (120 ml) milk or dairy-free alternative (unsweetened almond, oat, or cow’s milk)
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1/2 teaspoon (2.5 ml) vanilla extract
  • 1/4 teaspoon (0.5 g) cinnamon
  • Pinch of salt
  • Optional toppings: fresh berries, sliced banana or diced apple, chopped nuts, nut butter, shredded coconut, dark chocolate chips

Instructions

  1. Combine dry ingredients: In a mixing bowl or jar, add rolled oats, chia seeds, cinnamon, and salt. Stir gently to distribute evenly.
  2. Add wet ingredients: Pour in Greek yogurt, milk or dairy-free alternative, honey or maple syrup, and vanilla extract. Stir until fully combined and creamy.
  3. Seal and refrigerate: Cover the jar or bowl with a lid or plastic wrap and refrigerate for at least 6 hours or overnight.
  4. Check consistency: Stir the oats the next morning. If too thick, add a splash more milk; if too thin, add a sprinkle of oats or chia seeds and let sit for 15 minutes.
  5. Add toppings: Finish with your favorite fresh fruit, nuts, or nut butter. Serve cold or at room temperature.

Notes

Use old-fashioned rolled oats for best texture; quick oats can become mushy. For a smoother texture, blend oats and liquids before adding chia seeds. Stir halfway through setting time to prevent chia seeds from clumping. Store leftovers in an airtight container in the fridge for up to 3 days. Adjust sweetness to taste or skip sweetener for less sugar.
