  • ½ cup (75g) fresh strawberries, chopped
  • 2 tablespoons (30g) low-fat cream cheese, softened
  • 1 scoop (~30g) vanilla-flavored whey protein powder
  • ¾ cup (180ml) unsweetened almond milk
  • 2 tablespoons (30g) plain Greek yogurt
  • 1 teaspoon (7g) honey (optional)
  • 1 tablespoon (12g) chia seeds
  • ¼ teaspoon fresh lemon zest
  • ½ teaspoon vanilla extract

Instructions

  1. Soften the cream cheese by letting 2 tablespoons sit at room temperature for 10 minutes.
  2. In the same bowl, whisk together almond milk, Greek yogurt, honey, vanilla extract, lemon zest, and softened cream cheese until smooth.
  3. Stir in rolled oats, protein powder, and chia seeds until evenly combined.
  4. Gently fold in chopped strawberries, being careful not to mash them.
  5. Spoon the mixture into one or two mason jars or airtight containers, seal tightly, and refrigerate overnight or for at least 6 hours.
  6. Before eating, stir the oats well; add a splash of almond milk if too thick. Optionally, top with fresh strawberry slices or crushed nuts.

Notes

Softening the cream cheese is essential to avoid lumps. Use rolled oats for best texture, not instant oats. Adjust protein powder amount to control thickness. Stir well before eating and add milk if needed. Can be warmed briefly in microwave if preferred warm.
