  • 1 ¼ cups (300ml) warm water (about 110°F)
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • 2 tablespoons brown sugar
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon salt
  • ½ cup baking soda (for boiling bath)
  • Coarse sea salt (for sprinkling)
  • 1 large egg, beaten (for egg wash)
  • 8 ounces sharp cheddar cheese, freshly shredded
  • ¾ cup light lager or pilsner beer
  • 4 ounces cream cheese, softened
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In your mixing bowl, combine the warm water and brown sugar. Sprinkle the yeast on top and let it sit for 5-7 minutes until it gets foamy.
  2. Make the dough: Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add the remaining flour, ½ cup at a time. The dough should come together into a shaggy ball that pulls away from the sides of the bowl.
  3. Knead the dough: If using a stand mixer, knead with the dough hook on medium speed for about 5 minutes. By hand, turn the dough out onto a lightly floured surface and knead for 7-8 minutes until smooth and elastic.
  4. First rise: Place the dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm spot for about 30 minutes until doubled in size.
  5. Preheat and prep: While the dough rises, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Fill your large pot with about 8 cups of water and bring it to a boil. Carefully add the ½ cup of baking soda.
  6. Shape the bites: Punch down the risen dough and turn it out onto a lightly floured surface. Divide it into 4 equal pieces. Roll each piece into a long rope, about 1-inch thick. Cut the rope into 1-inch pieces.
  7. The baking soda bath: Drop 5-6 pretzel bites into the boiling baking soda water. Boil for exactly 30 seconds, then use your slotted spoon to transfer them to the prepared baking sheet. Space the bites about 1 inch apart.
  8. Egg wash and salt: In a small bowl, beat the egg with 1 tablespoon of water. Brush each pretzel bite with the egg wash, then sprinkle generously with coarse sea salt.
  9. Bake: Bake for 12-15 minutes, or until the pretzel bites are deep golden brown.
  10. Make the beer cheese dip: While the pretzels bake, combine the cream cheese and beer in a small saucepan over medium-low heat. Whisk until the cream cheese is melted and smooth. Gradually add the shredded cheddar, stirring constantly until melted. Stir in the Dijon mustard, garlic powder, and Worcestershire sauce. Season with salt and pepper to taste. Keep warm over low heat until ready to serve.
  11. Serve immediately: Transfer the pretzel bites to a serving platter and serve with the warm beer cheese dip on the side.

Don’t skip the baking soda bath; it creates the authentic pretzel crust. Watch water temperature for yeast activation. Work quickly with the baking soda bath (only 30 seconds). Shred your own cheese for the dip to avoid graininess. Let the dip simmer gently to prevent separation.
