Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20-30 minutes, or microwave in 10-second bursts until soft but not melted.
  2. In a medium mixing bowl, combine softened cream cheese with a pinch of salt, a pinch of pepper, and 1/4 teaspoon garlic powder (if using). Beat with a hand mixer or stir vigorously with a wooden spoon until smooth and creamy.
  3. Fold in 1 cup fresh spinach (chopped if leaves are large) and 1/2 cup shredded carrots (if using) until evenly distributed.
  4. Lay out 4 large flour tortillas on a clean cutting board or countertop. If cold, warm in the microwave for about 10 seconds to make them pliable.
  5. Spread about 2-3 tablespoons of the cream cheese mixture evenly over each tortilla, going all the way to the edges.
  6. Place 2-3 slices of deli turkey on top of the cream cheese on each tortilla, overlapping slightly to cover the surface, leaving the last inch of one edge bare.
  7. Starting at the edge closest to you, roll the tortilla away from you as tightly as possible without tearing, using fingers to keep filling tucked in. Press down gently to seal the seam.
  8. Wrap each rolled tortilla tightly in plastic wrap or parchment paper and place seam-side down in the refrigerator for at least 30 minutes (or 15 minutes in the freezer).
  9. After chilling, unwrap the rolls and place on a cutting board. Using a sharp knife, slice each roll into 1-inch thick pieces using a gentle sawing motion.
  10. Arrange pinwheels on a serving platter with spiral side up, or pack in a container in a single layer. Serve immediately or store for later.
