A creamy, comforting chicken soup made in the slow cooker with sun-dried tomatoes and a lightened-up creamy base using Greek yogurt and cream cheese. This easy recipe is perfect for busy weeknights and meal prep.

  • 1.5 pounds boneless, skinless chicken breast or thighs
  • 4 cups low-sodium chicken broth
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 bay leaf
  • 1/2 cup plain Greek yogurt, at room temperature
  • 2 ounces cream cheese, softened
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until onions are translucent and veggies soften. Add minced garlic and cook for 30 seconds until fragrant.
  2. Transfer sautéed vegetables to the bottom of a 6-quart slow cooker.
  3. Place chicken breasts or thighs on top of vegetables. Sprinkle with oregano, thyme, red pepper flakes (if using), salt, and pepper. Add bay leaf.
  4. Scatter chopped sun-dried tomatoes over everything. Pour in low-sodium chicken broth. Liquid should mostly cover the chicken; add more broth or water if needed.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is tender and shreddable.
  6. Remove chicken to a cutting board and shred with two forks. Discard bay leaf. Optionally, use an immersion blender to partially blend the soup for a thicker texture.
  7. In a small bowl, whisk together room-temperature Greek yogurt and softened cream cheese until smooth.
  8. Ladle about 1 cup of hot broth from the slow cooker into the yogurt mixture and whisk until combined (tempering).
  9. Return shredded chicken to the slow cooker. Pour in yogurt mixture and stir gently. Cook on LOW for another 10-15 minutes to heat through. Do not let it boil.
  10. Taste and adjust salt and pepper as needed. Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

Don’t skip sautéing the vegetables—it adds depth of flavor. Always temper the yogurt mixture with hot broth to prevent curdling. Let dairy ingredients come to room temperature before using. Taste and adjust seasoning at the end as slow cookers can mute flavors. For a thicker soup, mash some cooked veggies or use an immersion blender.
